Roasting paneer, a beloved Indian cheese, is a culinary technique that has evolved over time to cater to the diverse and vibrant Indian cuisine. Paneer, also known as Indian cottage cheese, is a fresh cheese that is exceptionally versatile and widely used in Indian vegetarian cooking. Roasting paneer involves heating it with various seasonings to enhance its flavor and texture.

Here’s some background information on this delicious practice:

Paneer: Paneer has been an integral part of Indian cuisine for centuries. It is made by curdling milk and then straining out the whey, resulting in a firm, cheese-like product. Paneer is prized for its mild and creamy taste, making it an ideal canvas for absorbing the flavors of various spices and seasonings.

Roasting Process: The process of roasting paneer typically involves cutting it into cubes or slices and heating it in a pan or on a griddle with ghee or oil. The paneer absorbs the flavors of the spices and ghee/oil, transforming into a savory, delicious treat.

Spices and Seasonings: Roasting paneer often includes the use of a variety of spices and seasonings. These can range from basic spices like cumin, coriander, and turmeric to more complex spice blends such as garam masala. These spices infuse the paneer with rich, aromatic flavors.

Texture and Appearance: Roasting paneer not only imparts a delightful flavor but also changes its texture. It becomes slightly crispy on the outside while maintaining its soft and creamy interior. The golden-brown exterior adds an appealing visual element to the dish.

Versatility: Roasted paneer can be served in a variety of ways. It can be added to curries, used in wraps, sandwiches, or salads, or simply enjoyed as an appetizer or snack. The versatility of roasted paneer makes it a favorite in both home cooking and restaurant menus.

Roasting paneer is not only a culinary delight but also a celebration of the rich tapestry of Indian flavors. It exemplifies the art of infusing simple ingredients with complex and enticing tastes, making it a cherished aspect of Indian cuisine.

Flip them every few minutes, allowing each side to acquire a delectable golden hue. Once perfectly browned, set the paneer aside.

Introduce a burst of Indian flavors to your Thanksgiving turkey by incorporating Bombay Curry Spice Rub into your marinade or rub. This aromatic blend typically includes coriander, cumin, turmeric, fenugreek, and other spices that lend a harmonious balance of earthiness, warmth, and a touch of heat.
Garam Masala Spice Mix: Warming Up Your Sides

Add a pinch to your gravy for an unexpected twist that will keep your guests guessing and savoring each bite.

Kashmiri Chili Powder: Adding a Fiery Elegance

For those seeking a touch of heat without overwhelming the palate, Kashmiri chili powder is the perfect choice. Elevate your Thanksgiving menu by introducing this elegant spice that adds a subtle kick, allowing the other flavors to shine.

Cardamom: Sweetly Sublime Endings

Finish your Thanksgiving feast on a sweet note by infusing desserts with the fragrant allure of cardamom. Elevate your homemade pies or desserts with a dash of this versatile spice, and watch as your guests savor the unexpected layers of flavor.

Marinate: Begin by slicing the leftover turkey into bite-sized pieces about 2 cups. Create a tantalizing marinade using 1 1/2 cups of plain yogurt, 1 tablespoon garam masala, 1 teaspoon of cumin, coriander, and turmeric, each and a hint of chili powder. Allow the turkey to marinate in this aromatic blend for a few hours, ensuring each morsel absorbs the rich flavors.

Sauté: In a pan, heat 3 tablespoons of ghee. Sauté finely chopped onions until golden brown, then add 1 large minced garlic clove and 1/2″ nub of minced ginger for a fragrant base. Sprinkle in a little more garam masala, cumin, and coriander to intensify the spice medley. Watch as your kitchen fills with the enticing aroma of Indian spices.

Tomato: Stir in a 14oz. can of crushed tomatoes, allowing them to meld seamlessly with the spices. Simmer the mixture until it thickens, intensifying the flavors. For an extra kick, consider adding a splash of heavy cream to create a luscious, creamy texture that will elevate your Turkey Tikka Masala to new heights.

Turkey Tikka Magic: Add the marinated turkey pieces to the simmering sauce, ensuring each piece is coated in the decadent mixture. Allow the turkey to absorb the flavors, letting it simmer gently until tender. The result? Tender, succulent turkey infused with the bold and aromatic essence of traditional Tikka Masala.

Garnish and Serve: Sprinkle with freshly chopped cilantro over the Turkey Tikka Masala for a burst of freshness. Serve it over a bed of basmati rice or with warm, pillowy naan bread. This transformed Thanksgiving leftover dish is a culinary masterpiece that marries the warmth of holiday nostalgia with the vibrant allure of Indian cuisine.

In just a few simple steps, you’ve turned your Thanksgiving leftovers into a culinary triumph. The Turkey Tikka Masala not only rescues your turkey from mundane reheating but also introduces a symphony of flavors that will make you savor every bite. Embrace the fusion of Thanksgiving tradition and Indian culinary artistry, creating a memorable feast that extends the joy of the holiday season.

Chicken Chettinad is a flavorful and aromatic dish that originates from the Chettinad region in Tamil Nadu, Southern India. Renowned for its robust spices and intricate preparation, this dish reflects the rich cultural heritage of the Chettiar community. The Chettiars, a prominent merchant and banking community, have contributed significantly to the cultural and economic landscape of Tamil Nadu. Their cuisine, including Chicken Chettinad, is an embodiment of their penchant for opulence and intricate flavors.

This dish, in particular, showcases the culinary prowess of Chettiar kitchens. The dish typically features succulent chicken pieces marinated in a blend of spices like black pepper, Chettinad masala, turmeric, and fennel, among others. The unique touch comes from the use of coconut, and a special Chettinad masala, however, we used our own Garam Masala Blend to create a luscious gravy that clings to every morsel of chicken. Served with traditional South Indian staples like dosa, idli, or steamed rice, Chicken Chettinad is a celebration of the Chettiar culinary legacy.

Beyond its delectable taste, this chicken dish is a symbol of the Chettiar community’s hospitality and love for culinary artistry. Passed down through generations, the recipe encapsulates its cultural richness and continues to be a cherished dish, not only in the region but also on tables worldwide. Whether enjoyed at home or in a Chettinad-inspired restaurant, this dish offers a sensorial journey into the heart of Tamil Nadu’s vibrant culinary heritage.
