Ingredients:

  • 1/2 Cup red lentils (soaked for 30 mins)
  • 2 Cups water
  • 1 tbsp Ginger and Garlic Ghee
  • 1/2 Cup mixed fresh or frozen vegetables (carrots, beans, broccoli etc.)
  • 1/4 Cup coconut milk
  • 1/4 Cup chopped onions
  • 1/4 Cup diced canned or fresh tomatoes
  • 1/2 tsp Cumin
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red Chili powder
  • 1/2 tsp Garam Masala Mix
  • 1/2 tbsp Salt
  • Cilantro for garnishing

Steps:

  1. In a thick bottom pan put Ghee, add cumin and onions, and sauté until onions are golden brown.
  2. Add turmeric, red chili powder, Garam Masala Mix salt and tomatoes and stir until well mixed.
  3. Add vegetables and lentils. Stir until well mixed. Then, add water cover the pan with lid and cook it for 15/20 mins on medium flame. Be sure to stir while it’s cooking.
  4. When it’s finished cooking, add coconut milk, stir well.
  5. Yields 3 – 6 ounce cups of soup
