Classic Ghee Khichadi
There is a quiet kind of comfort waiting in a warm bowl of Classic Ghee Khichadi. Ingredients:

  • 1 cup SFV Classic Khichadi mix
  • 3 to 3 ½ cups water (more for softer texture)
  • ½ tsp salt (or to taste)
  • 1 tbsp ghee
  • ½ tsp SFV Garam Masala Blend
  • Optional: ¼ tsp turmeric, 1 tbsp chopped cilantro, lemon wedge

Steps:

  1. Rinse the khichadi mix briefly in a fine strainer.
  2. Add mix, water, and salt to a pot. Bring to a boil.
  3. Reduce to low, cover, and simmer 18 to 25 minutes, stirring once or twice, until soft and porridge-like.
  4. In a small pan, warm ghee. Add garam masala and stir 10 seconds.
  5. Pour the spiced ghee over the khichadi. Stir and serve with cilantro and lemon if using.
