Vegan Comfort Bowl
There is something deeply soothing about a bowl of Coconut Oil Khichadi. Creamy rice and lentils simmer gently with tender vegetables, while coconut oil adds a delicate richness that feels light yet satisfying. This plant-based comfort dish is cherished for its nourishing simplicity and digestive ease, offering warmth without heaviness. Finished with fresh herbs and a bright squeeze of lime, each spoonful feels clean, calming, and quietly restorative.

Ingredients:

  • 1 cup SFV Khichadi with Coconut Oil mix
  • 3 to 3 ½ cups water
  • ½ tsp salt
  • 1 cup chopped spinach (or kale)
  • ½ cup diced carrots (small dice)
  • 1 tbsp lime juice
  • Optional: ¼ tsp SFV Garam Masala Blend, cilantro

Steps:

  1. Rinse the khichadi mix briefly.
  2. Add mix, water, and salt to a pot. Bring to a boil.
  3. Simmer covered 15 to 20 minutes.
  4. Stir in carrots and spinach for the last 5 to 7 minutes until tender.
  5. Finish with lime juice. Add a pinch of garam masala if you want extra warmth.
